INGREDIENTS:

1 – 2 heads of organic cauliflower (2 if small) wash and cut into florets
1 Tbsp (approx.) avocado oil or other healthy oil
1 chopped small onion
3 garlic cloves, minced
Fresh herbs like chives, rosemary, oregano, or thyme (about 1-2 Tbsp)
Sea Salt and pepper to taste
2 Tbsp butter alternative or ghee

DIRECTIONS:

Steam or boil cauliflower for 8-10 minutes. While cauliflower is steaming, in another pan, add oil and sauté onion and garlic until soft. (If you spray the pan with herb-infused avocado oil, there will be even more flavor).

Place cauliflower, sautéed onion and garlic, and fresh herbs and seasonings in a Vitamix or another high-speed blender. Add butter alternative and blend until smooth. When placing cauliflower with sautéed onion and garlic in the blender, make sure you don’t pour in any residual water/oil from cooking. Otherwise, it will be pretty soupy.

Taste and add sea salt and pepper if needed.
