  • 2 envelopes unflavored gelatin
  • 6 Tbsp water
  • 1 C organic maple syrup
  • 1 tsp organic vanilla extract
  • ¼ tsp sea salt
  • coconut oil
  • tapioca starch (or other starch)


  1. Dissolve gelatin in 6 tablespoon of boiling water.
  2. Add maple syrup, vanilla, and sea salt.
  3. Beat with electric mixer for 12 minutes, until thick.
  4. Batter should triple in size. Coat a 9×12 inch dish with coconut oil and dust with starch.
  5. Pour marshmallow batter into dish.
  6. Let cool for at least 3 hours or overnight.
  7. Cut marshmallows into squares with a wet knife.
