INGREDIENTS

  • ½ C frozen, thawed broccoli cut into small pieces
  • ½ C frozen thawed cauliflower cut into small pieces
  • ½ C shredded carrots
  • ½ C diced tomato
  • ½ C Garlic & Oil Dressing
  • ¼ tsp cilantro
  • 1 tsp salt
  • 2 C cooked quinoa
  • ½ C shredded organic cheese or cheese alternative (optional)
  • ¼ tsp apple cider vinegar
  • ½ tsp tamari sauce (wheat-free, organic)
  • ¼ tsp of lemon juice
  • Pinch of Stevia (just shy of ⅛ teaspoon)

DIRECTIONS

  1. Combine all ingredients and mix thoroughly.
  2. Chill in refrigerator for a few hours before serving.
  3. Enjoy!
