  • 1 C Medjool dates, pitted
  • 1 C almond flour or ground almonds
  • ¼ C unsweetened desiccated coconut + 1/4 C extra to coat the balls
  • ¼ tsp sea salt

  1. Place the Medjool dates in a bowl and cover with water. Set aside for 5 minutes.
  2. Drain the pitted Medjool dates and pat dry with a paper towel. Then, cut into halves and place into a food processor with the S-blade attachment.
  3. Add the almond flour, 1/4 C desiccated coconut, and salt.
  4. Blend at high speed until it comes together into a sticky dough – it usually takes about 1 minute.
  5. Stop the food processor, scoop out 1 Tbsp of dough, and roll the dough in your hand to form a ball. If the batter is a bit dry, add 1 Tbsp of water into the food processor, blend again to combine, and then form balls.
  6. Roll each bliss ball into the remaining 1/4 C desiccated coconut and place onto a parchment-covered plate.
  7. Repeat these steps until you form about 16 bliss balls.
  8. Place in the fridge for 30 minutes to set.

Store in a sealed container in the fridge for up to 1 month.

If the coconut doesn’t stick well, wet your hand, roll the bliss ball into your hand to add moisture, and then roll in the coconut to cover.
