Rhubarb recipes are usually loaded with sugar. This one has no regular sugar… how awesome is that! This strawberry rhubarb crumble is the perfect combination of tart and sweet flavors that will leave you wanting more.

INGREDIENTS:

Strawberry Rhubarb Crumble Inside
3 cups organic strawberries, tops removed and sliced
3 cups diced rhubarb
1 tablespoon chia seeds
1 cup xylitol
3 tablespoons gluten-free flour blend

Strawberry Rhubarb Crumble Topping
1 cup organic gluten-free rolled oats
1 cup grass-fed butter or dairy-free butter alternative
1 cup organic coconut palm sugar
1 1/2 cups all-purpose gluten-free flour
few dashes of sea salt

DIRECTIONS:

Preheat oven to 375 degrees.

Mix ingredients for inside of crumble together and place in a 9×13 baking dish.

Mix ingredients for topping together and crumble in chunks over mix.

Bake 40-45 minutes until crisp and top is browned.
